Back in the Kitchen

I've been on the road for several months - more or less nonstop since April. It seems I've spent no more than 3 weeks at a time in any given place. In most cases it was much shorter. I have relished every moment. That being said, I am very glad to have landed back in my apartment, back in my kitchen. I was spoiled with the delicious regional cooking and inspired creations of my friends and family. Now I am back on my own. It is long overdue to have some kitchen experiments of my own.

I stopped by a local market and got fresh fruit and veg. They smell divine. Like real vegetables should. This inspired me to experiment a bit. Diced chicken with sweet green pepper and red onion, seasoned with salt, pepper, oregano, and red pepper flakes to make things interesting. Very pleased with the result. I also attempted to make sweet potato chips for the first time in a  long while. Sliced sweet potato seasoned with salt, pepper, garlic, and oregano then drizzled with olive oil. These didn't come out as well as I would have liked. A bit too much olive oil. Also I am still learning my new oven.

Healthy. Delicious. Great post-yoga meal.
